Biscotti

Go Italian with these easy to make Biscottis.

Ingredients

• Flour – 1 kg
• Sugar – 800 gms
• Baking powder – 20 gms
• Baking soda – 4 gms
• Salt – 2 gms
• Butter – 300 gms
• Eggs – 400 gms
• Vanilla Essence – 8 mls
• Pistachio – 600 gms
• Saffron – 2 gms

Method

1. Sieve the flour, baking powder, baking soda and salt together

2. In a separate bowl, whisk butter and sugar for 5 minutes until smooth

3. Add in the eggs one by one to the sugar mixture

4. Then, add in the vanilla essence and saffron

5. Fold in the flour mixture to the egg and sugar mixture

6. Roll the mixture into a log and place on a baking tray

7. Bake at 160⁰C for 20 minutes

8. Cut into thin slices

9. Turn over the slices to the other side, place them on a baking tray and bake at 120⁰C for 10 minutes
