Cinnamon & Sugar Cookies

Ingredients

  • 8 tbsp unsalted butter

  • 1 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla essence

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp ground cinnamon

  • 2 cups all-purpose flour

Method

  • Whisk the dry ingredients together in a bowl and keep aside.

  • Beat butter and granulated sugar in another bowl until light and fluffy. Beat in the egg and vanilla. Now add the flour mixture in parts and beat until it all comes together to form a dough. Cling wrap this dough and refrigerate for an hour.

  • Preheat your oven to 325 degree Celsius. After 1 hour, take the dough, unwrap and roll some of it on a lightly floured surface. Cut out shapes with cookie cutters and place them on a cookie tray. Bake for 10-12 minutes or until golden on the sides. Repeat the process for the remaining dough.

Pumpkin Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 cup shredded pumpkin

  • 1/3 cup vegetable oil

  • 2 large eggs

  • 1 1/4 cups plus 1 tbsp sugar

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon

Method

  • Preheat the oven to 180°C. Line a muffin pan with cupcake liners and keep aside.

  • Stir together cinnamon and 1 tablespoon sugar in a small bowl. Keep aside.

  • Whisk together pumpkin, oil, eggs, 1 1/4 cups sugar, baking soda and salt in a large bowl until smooth. Whisk in flour mixture until just combined.

  • Pour the batter into the liners(each should be three-fourths full). Sprinkle the top with the cinnamon-sugar mixture.

  • Bake for 25 minutes until golden brown or until a skewer inserted into the center of a muffin comes out clean. Allow to cool completely before removing the muffins from the pan.
