Roast Turkey
Ingredients
- Whole turkey cleaned
- Onion 100 g
- Butter 100 g
- Garlic 100 g (whole peeled)
- Carrot 100 g roughly cut for turkey stuffing
- Leeks 100 g
- Celery 100 g
- Thyme 10 g
- Rosemary 10 g
- Sage 5g
- Whole orange 2nos (sliced)
- Dijon Mustard Paste 25g
- Apple vinegar 30 ml
- Salt 50 g
- Black pepper 10 g
- Honey 15 ml
- Oil 100 ml
Method:
- Marinate the turkey with all the above ingredients and keep it chilled for about 24 hours.
- Preheat oven for 160’c and put the marinated turkey for 2 hours for 30 minutes.
- Once the roasting has been done, check the core temperature (should be 75’c), baste it with oil and finish with honey glaze.
- Serve hot with cranberry sauce, Brussels sprouts, and sweet potato mash.
