The one thing every true-blooded Indian looks forward to this time of the year – mangoes! Fresh juicy mangoes make for some mouth-watering recipes and that is just what we have here. With creativity from the chefs of Hotel Sahara Star, Mumbai, here are some unique and tasty things to do with the king of fruits!
Mango and lime marinated shrimps with avocado
Ingredients
shrimps 250 gms
mango pulp 50 gms
lemon juice 10 ml
kasundi mustard 5 gms
avocado 100 gms
olive oil 1 tbsp
snow peas shoot 20gms
chilli flakes
salt and pepper to taste
Method
Take the mango pulp and add lemon juice, Kasundi paste, salt, chilli flakes and make a marinade. Marinate prawns in this mix and keep a side for 1 hour. Heat the grill pan put some oil and cooked prawns. For plating, take a whole mango, remove the seed and stuff with snow peas shoot, avocado, then arrange the prawns on it and serve.
Mango avocado and cream cheese sushi
Ingredients
For the sushi
sushi rice 1 cup
water 2 cups
sugar 1 tbsp
salt 1 tbsp
rice vinegar 2 tbsp
For the roll
mango, 1
avocado, 1
cream cheese 100 gms
nori sheets, 4
Method
Combine the rice and water in a rice cooker and cook. Meanwhile, in a small bowl combine the rice vinegar, sugar and salt to be heated in the microwave for a few seconds to allow the sugar to dissolve. Prepare the filling ingredients for the roll and a side. Transfer the rice to a large bowl and pour in the vinegar mixture, gently folding the rice until the mixture gets incorporated. The rice will start getting a little sticky and shiny. Take a sushi mat and put nori sheet on it, then spread rice on the nori sheet. Then, change the side rice side will go down nori sheet side up then put your stuffing on nori sheet and roll the sushi. Cut in small pieces and serve.
Mango nutella crepes with whipped cream
Ingredients
mangoes, 2
All-purpose flour 1 cup
milk ½ cup
water 2/3 cup
butter ¼ cup
vanilla extract 2 tbsp
sugar 1 tbsp
salt 1/4 tbsp
vegetable oil 1 tbsp
For the stuffing
chopped mango 100 gms
Nutella 100 gms
fresh cream 50 gms
Method
Mix all the ingredients and make a batter. Heat a non-stick pan and make nice thin crepes. Spread nutella on crepes, stuffed with chop mango and fold it. Serve with some dusting of sugar and fresh cream.
