Old School Vanilla Muffins
Ingredients

125 g butter

125 g powdered sugar

125 g all-purpose flour

2 eggs

1 tsp baking powder

1 tsp vanilla essence
Method

Preheat your oven to 180 C. Line a muffin pan with cupcake liners and keep aside.

Beat butter and sugar until light and fluffy. Add eggs and vanilla essence and beat again.

Sift flour and baking powder into this mix and beat again for 3-4 minutes. Spoon the batter into the cupcake liners.

Bake in the preheated oven for 20-25 minutes till done. Allow the muffins to cool for 15 minutes before removing them from the muffin pan.
Eggless Wheat Flour Cake
Ingredients

2 cups wheat flour

2 tsp ground cinnamon
-
2 cups brown sugar
-
1 ½ tsp baking soda
-
½ tsp baking powder
-
1 cup curd
-
¾ cup water
-
2/3 cup cooking oil
Method

Preheat oven to 200 C.

Mix together wheat flour, cinnamon, brown sugar, baking soda and baking powder in a bowl.

Blend curd, water & oil in another large bowl. Mix the contents of both bowls together and blend well.

Grease an
8 inch
cake tin with oil and pour the batter into this tin.

Bake for 30 minutes or until a skewer inserted comes out clean. Allow the cake to cool for 15 minutes on a wire rack.
Cinnamon & Sugar Cookies
Ingredients

8 tbsp unsalted butter

1 cup granulated sugar

1 egg
-
1 tsp vanilla essence
-
1/2 tsp baking powder
-
1/4 tsp salt

1/2 tsp ground cinnamon

2 cups all-purpose flour
Method

Whisk the dry ingredients together in a bowl and keep aside.

Beat butter and granulated sugar in another bowl until light and fluffy. Beat in the egg and vanilla. Now add the flour mixture in parts and beat until it all comes together to form a dough. Cling wrap this dough and refrigerate for an hour.

Preheat your oven to 325 degree Celsius. After 1 hour, take the dough, unwrap and roll some of it on a lightly floured surface. Cut out shapes with cookie cutters and place them on a cookie tray. Bake for 10-12 minutes or until golden on the sides. Repeat the process for the remaining dough.
Pumpkin Muffins
Ingredients:

1 1/2 cups all-purpose flour

1 tsp baking powder

1 cup shredded pumpkin

1/3 cup vegetable oil

2 large eggs

1 1/4 cups plus 1 tbsp sugar

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon
Method

Preheat the oven to 180°C. Line a muffin pan with cupcake liners and keep aside.

Stir together cinnamon and 1 tablespoon sugar in a small bowl. Keep aside.

Whisk together pumpkin, oil, eggs, 1 1/4 cups sugar, baking soda and salt in a large bowl until smooth. Whisk in flour mixture until just combined.

Pour the batter into the liners(each should be three-fourths full). Sprinkle the top with the cinnamon-sugar mixture.

Bake for 25 minutes until golden brown or until a skewer inserted into the center of a muffin comes out clean. Allow to cool completely before removing the muffins from the pan.
