Peanut Butter Cups
Packed with the goodness of peanut butter, this recipe is so easy and a must-try
Ingredients
200 gm dark chocolate, chopped
¼ cup crunchy peanut butter
1 tbsp butter
¼ cup powdered sugar sifted
Silicon cupcake moulds
Method
- In a microwave safe bowl, heat peanut butter and butter in a microwave and till the butter becomes soft (not melted).Do this at intervals of 20 seconds and stir after every time.
- Mix this mixture with powdered sugar till no lumps are seen. Set aside to cool.
- Take a saucepan, fill it with water and let it simmer on the gas. In another bowl, add the chopped dark chocolate and place this bowl over a saucepan of simmering water for the chocolate to melt.
- Take a tsp of this melted chocolate and pour into the mould to make a chocolate shell.
- Make little balls of the peanut butter mixture and place these inside the chocolate shell.
- Pour another tsp of the melted chocolate over the peanut butter ball.
- Refrigerate for 30 minutes or until set.
Lemon Cheesecake
Creamy, delicious and addictive, this cheesecake will make you win many hearts at once.
Ingredients
12-15 Marie biscuits/digestive biscuits
3-4 tbsp butter
200gmcream cheese
400 gm condensed milk
200ml fresh cream
1 lemon, juice
2 tsp gelatin
1tbsp whipped cream
Method
- In a zip lock bag, seal in all the biscuits and crush using a rolling pin. Add the melted butter to this and mix using your hands. The mixture should hold firm when shaped into a ball.
- In a flat bottom serving dish, make a layer of this mixture. Press it firmly to create a tight layer of the biscuit mix. Refrigerate to set.
- In a food processor, blend together the cream cheese and fresh cream.
- Add condensed milk little by little checking the sweetness according to your taste.
- Add the lime juice to this mixture. Once you add the lime juice, the mixture will split.However while mixing it will come together into a nice smooth creamy mixture.
- Add gelatin to 2 tablespoons of lukewarm water.
- Add the gelatin mix to the cream mixture and blend well.
- Pour the mixture onto the biscuit base. Refrigerate it for 1- 2hrs.
- Swirl out some whipped cream on the cake and serve.
Chocolate Fudge
Sinful and decadent, this chocolate fudge is finger-licking good.
Ingredients
3 cups chocolate chips
1 cup condensed milk
¼ cup butter
1 cup nuts, roasted
Method
- Take a flat bottom dish pan and line it with aluminium foil hanging over the sides and set aside.
- In a bowl, mix together condensed milk, butter and chocolate chips and microwave. Do this at intervals of 20 seconds while mixing in between.
- Once done, add the nuts and mix well.
- Pour this mixture into the prepared dish and smoothen the batter.
- Leave it to chill in the refrigerator for at least 2 hrs.
- Pull out the aluminium foil with the fudge from the dish. Cut these into pieces.
- Store them in an airtight container in the fridge.
Triple Layer Dessert
Try this inventive no-bake dessert with a dash of vanilla and a topping of fresh fruits.
For the Base
12-15 Marie biscuits/ digestive biscuits
4 tbsp butter
For the Vanilla Custard
1/3 cup sugar
¼ cup cornstarch
2 egg yolks
1 cup milk
1 tbsp butter
1 tsp vanilla extract
For Garnishing
Strawberry /kiwi/mango, chopped
Method
For the base
- Crush the biscuits to a fine mixture.
- Add melted butter to this and mix well.
- Take shot glasses and make a layer of this biscuit and let it chill in the fridge for an hour.
Vanilla Custard
- Combine sugar, cornstarch, egg yolks, and milk in a bowl. Place over a saucepan of simmering water. Whisk until the mixture thickens.
- Remove from heat. Add butter and vanilla and mix until dissolved.
- Add a tbsp of the custard to the biscuit base in the shot glass.
- Let it set in the fridge.
- Add the cut fruits as the topmost layer and serve.
Rocky Road
Crunchy chocolate bites with the goodness of nuts and gooey marshmallow.
Ingredients
500gm chocolate chips
250 gm white chocolate chips
Assorted nuts a handful
Colourful candy(Gems, M&M’s) a handful
A few Marshmallows
Method
- In a microwave safe bowl melt the chocolate chips.
- Once it melts, add some of the nuts and marshmallows and mix.
- Take a flat bottom dish and line it with a layer of aluminium foil.
- Pour the chocolate mixture into the pan and add the remaining nuts, marshmallows and white chocolate chips. Sprinkle some colourful candy on top.
- Refrigerate for an hour to set.
- Once set, remove the foil & break the slab into pieces with a rolling pin.
- Your rocky road is ready to eat.
