CHICKEN MOUSSE WITH CHILLY CHOCOLATE SAUCE
Ingredients
- 2 cups cooked chicken mince
- 1 cup mayonnaise
- Unflavored gelatin
- 1 lemon, juice
- 1 cup cream
- Pinch each of basil and rosemary
- 1/4 cup almonds
For the chili chocolate sauce
- 2 tbsp vegetable oil
- 1 medium-sized onion
- 3 small chilies, medium spiced,
- 50 ml chicken broth (water)
- 1 sprig rosemary
- 50 gm chopped tomatoes
- 50 gm dark chocolate (85%), chopped
- 1 tbsp sugar
- 2 tbsp flour
- Salt
- Black pepper
How To Make
- Dissolve gelatin into the lemon juice. Set aside.
- Blend together the chicken mince, basil, rosemary and almonds. Now, pour the gelatin mixture into the chicken mince.
- Add the cream into the mixture and chill until it gets mushy.
- Beat the chicken mince mixture until fluffy and fold in the mayonnaise. Refrigerate in a mould or a bowl until the mixture gets firm.
- For the chocolate sauce, heat some oil in a pan. Add the onions and sauté for a bit. Throw in the chili and tomatoes and continue sautéing.
- Pour over the chicken broth followed by the chopped chocolate. Season with rosemary sprig, salt and pepper. Bring to the boil and keep stirring constantly.
- Serve the chicken mousse with the warm chocolate sauce on top.
