Maggie Cutlets

An easy starter to get your guests going at a family meet.

Ingredients:

1 cup Maggi, boiled (1 packet)

1 medium-sized onion, finely chopped

1 medium sized capsicum, finely chopped

1/2 cup carrot, peel and finely chopped

1/2 cup peas

1 medium-sized potatoes, boiled and mashed

1 green chili, finely chopped

Salt to taste

Red chili to taste

1/4 tsp garam masala

1/2 tbsp amchoor/ raw mango powder

2 tbsp coriander powder

1/4 cup homemade breadcrumbs

Vegetable oil for deep frying

Method:

Boil Maggi or noodles in water till soft and squidgy. Drain it and keep aside.

Combine chopped green capsicum, onion, green chili, carrots and peas in a big bowl.

Combine boiled potatoes and Maggi in the same bowl with vegetables.

Add spices and mix well as dough.

Add enough bread crumbs to prepare dough consistency.

Divide the dough into equal 12 pieces.

Heat oil in a wok, on medium flame.

When the oil is hot enough, deep fry the pieces in small batches till golden and crisp on low flame.

Serve hot Maggi cutlets with sauces and tea.

 

Mushroom Galouti Kebab

A simple yet delicious snack to bring the family together.

Ingredients

600 gms mushrooms

2 small potatoes, grated

3 tbsp channa dal powder

I tbsp turmeric powder

¼ tsp clove powder

½ tsp cumin seeds

2 tbsp ginger garlic paste

2-3 green chilies, chopped

1 tbsp oil

Salt to taste

Method:

Parboil the button mushrooms with turmeric powder and then blend them to a fine consistency.

Sauté cumin seeds, ginger-garlic paste and chopped green chilies in oil.

Add mushrooms and cook till the moisture evaporates.

Add boiled and grated potatoes and cook till the oil starts leaving the sides of the pan.

Then add salt to taste, clove powder and roasted channa dal powder in the mixture.

Shape them into tikkis and deep fry till golden brown.

Serve hot with mint chutney.

 

Fried Okra

The perfect side dish is actually no fuss to make.

Ingredients

3 cups sliced okra

1/3 cup milk

2 eggs well beaten

2-3 cups self-rising white corn powder

2-3 dashes hot sauce (or a sauce for your preference)

Vegetable oil for frying

Method

Combine eggs, hot sauce, and milk in a large bowl.

Pour cornmeal into a separate bowl.

Coat sliced okra in the egg mixture, then coat with corn powder

Heat oil in a large skillet over medium-high heat.

Reduce heat to medium.

Add okra, frying in batches, until golden brown for about 2-4 minutes.

Drain on paper towels.

Season it with additional salt if desired.

 

Chicken Thai Rice

Chicken lovers will find this one a rare treat.

Ingredients

250 gms chicken mince

1 tsp Thai green curry paste

2 cups jasmine rice cooked

1 tsp oil

7-8 garlic cloves

1 tsp fresh red chilies chopped

1 medium onion sliced

Salt to taste

Crushed black peppercorns to taste

½ cup coconut milk

1 sprig of fried basil leaves for garnish

Method

Heat oil in a non-stick wok.

Slice garlic, add to pan and sauté till golden.

Add fresh red chilies and onion, mix and sauté till onion turns golden.

Add Thai green curry paste and mix well.

Add chicken mince and salt, mix well and cook for 2-3 minutes.

Add rice and crushed peppercorns, mix and cook for a minute.

Add coconut milk and some water, mix, cover and cook on low heat for 2-3 minutes.

Serve hot, garnished with fried basil leaves.
